Chillin' with Chilli

Yesterday I was craving some really spicy Tex-Mex food...so I went grocery shopping and decided to go for a classic "Chilli con carne".

..and let me tell you... it was sooooooo good!!


Here my recipe:

Ingredients:
1 spring onion
1 garlic
2 TS of olive oil "extra vergine"
300gr minced beef
1-2 dl red wine
1 yellow pepper
1 hot chilli
1 can red beans
1 can diced tomatoes
1 small can corn
1 cup of water 
Salt & Pepper
1 bunch of parsley

Preparation:
Cut the spring onion and the garlic into small pieces. Insert the olive oil in big pan and start to sear the spring onion/garlic in the hot oil. Add the minced beef and continue searing. Meanwhile cut pepper and chilli into bite-sized pieces. Deglaze the onion/beef mix with the red wine. Let it cook for 2 minutes until the wine is almost dissolved. Now add the yellow pepper and the chilli and stir well. Rinse the beans with water and then add the beans, tomatoes and the corn into the pan. Stir and let all the ingredients cook slowly on small heat. If the fluid has completely evaporated, add some water and continue to cook it slowly and don't forget to stir it from time to time. Now season all the ingredients with salt and pepper at your preference. Before serving add the freshly diced parsley. 
It's best when served with a fresh baguette!
