Yummie fruit pie...

I love fruit pies... year round, at all times!



Here my favorite recipe, modified by myself..

Filling:
2 heavily piled tablespoons low fat curd cheese
2 eggs
2 piled tablespoons white sugar
1 sachet vanilla sugar
1 good splash of milk
3-4 large fruits at your choice in my case I went for apples (e.g. Braebun), but it also works perfectly with apricots, plums, rhubarb etc.

Pastry:
1 package of puff pastry
2-3 tablespoons of grated almonds or hazelnuts

Directions:
Put puff pastry into a cake tray. Perforate dough with a fork until there are holes in every corner, so the dough won't burst when baking. Cover the dough with a thin layer of the grated nuts. Arrange the peeled and sliced fruits on the dough. Mix all the ingredients of the filling (except the fruits) then cover the fruits and dough with the filling. Bake for about 30 minutes at 180-200 degrees celsius. When the crust is golden brown and you can stick a tooth pick into the filling and it comes out without any residue the pie is ready! Let it cool down for a bit and then enjoy it lukewarm... YUMMIE!
