Strawberry and Rhubarb heaven

Today I am going to share a cake recipe with you, you'll forever be grateful to me - promised!!!

This cake is so light, fluffy, moist and fruity.. it fits superbably as an early summer dessert! Soooooo good!!!
You'll need the following ingredients:

500gr Strawberries and Rhubarb 50:50
          (it also works with frozen fruit!)
100gr soft butter
3 eggs
1 pinch of salt
200gr sugar
1 package vanilla sugar
200gr siphed flour
1/2 package baking powder
Icing sugar

Mix the butter, sugar, salt, eggs and vanilla sugar until it's fluffy. Then add the sifted flour and baking powder and continue to mix. Gently add the fruit pieces to the dough.

Put everything in a baking form (26cm diameter) and bake for about 55 minutes at 180 Celsius.

Let cool and then garnish with icing sugar and fruit...

Easy and quick in the making and heavenly in taste! ENJOY!
