A good old classic

The other day I had plenty of minced beef at home, and I really needed to use the meat before it had passed the good quality date. So my go to recipe to use a lot of minced beef is the good old meatloaf.

And the best part about it is, you can add pretty much anything into the recipe, that you want to get rid of...

So here my "main ingredients" that I always use for 4 people:

600-700 gr minced beef
1-2 garlic cloves, diced
1-2 shallots, diced
1 egg
1 bread bun from the other day soaked in 2-3 tbsp of whole milk
1 tbsp mustard
1 tbsp ketchup
1 tbsp chopped parsley 
1 tbsp italian herbs
salt and pepper as you like
1-2 tbsp panko if needed for the right consistency 
2-3 tbsp olive oil
4-5 dl of vegetable broth (kids friendly) or
1-2 dl white wine and 2-3 dl of vegetable broth

(You can always add more ingrediants, for example diced olives or crispy bacon with rosmary or extra vegetables to your mixture.)

Preheat the oven to 220 degrees celsius and keep the tray you're going to bake the meatloaf in already in the oven.

Mix everything together, except for the olive oil and the broth. 

Form a nice loaf and put it into your baking tray, after adding some olive oil to it.

Put the meatloaf into the oven for about 40-45 minutes. After about 25-30 minutes add the broth to the meatloaf and decrease the heat to 190 degrees celsius. 

Every now and then put some broth on top of the meatloaf until the meatloaf is ready.

Usually I serve it with mashed potatoes and vegetables...

Don't worry about the leftovers, the next day it tastes even better..
